What Castillo brings to the cup

Castillo is widely planted in Colombia for its resilience and reliable quality. When well-managed and roasted thoughtfully, Castillo delivers bright, citric acidity with balanced sweetness and fruit-forward notes — qualities you’ll find in this Tapias lot. 

Tasting notes (what to expect)

  • Aroma: fresh citrus and orchard fruit.
  • Cup: bright citric acidity, sweet stone-fruit or red-fruit notes, subtle chocolate or caramel undercurrent, and a clean, balanced finish. 

Roast & brewing guidance

  • Roast level: Medium roast — balanced to preserve acidity and sweetness while giving enough body for espresso and moka.
  • Espresso (starting recipe): 18–20 g dose → 36–40 g yield (1:2), 25–30 s extraction; fine grind; adjust to taste.
  • Moka pot (3-cup style): 15–18 g, medium-fine grind; preheat water, brew on low heat and remove when top chamber sputters for a syrupy, full-bodied cup. 
  • Filter option (if you prefer): 1:16 ratio (e.g., 16 g : 256 g water), medium grind, 92–96°C water, bloom 30–45 s, total brew ~3:00. This highlights the brighter fruit notes. 

Storage & roast date

  • Roast date: Fill in on the bag at roast. Best enjoyed 7–28 days after roast depending on preference for freshness vs. degassing.
  • Storage: Keep whole beans in an airtight container away from heat, light, and humidity. Grind just before brewing.

I like my coffee simple, filtered, or with a splash of fresh milk. You’ll taste the bright citric acidity and fruity notes that make this coffee special. But the truth is, there’s no right or wrong way to enjoy it, just sip it the way you like it.
