Why this coffee matters
Castillo is prized in Colombia for its resilience and ability to express bright acidity and fruit notes when properly managed; here it’s presented as a balanced, approachable espresso that highlights sweetness without heavy bitterness.
Brew & recipe suggestions
- Balanced espresso (start point): 18–20 g dose → 36–40 g yield (1:2), 25–30 s extraction, fine grind. Tweak to taste.
- Moka pot (3-cup): 15–18 g, medium-fine grind, preheat water, brew over low heat; remove when the top chamber sputters. Yield is concentrated and syrupy — great for milk drinks.
- Short filter (if preferred): 1:16 ratio (e.g., 16 g : 256 g water), medium grind, bloom 30–45 s; total brew ~3:00 — highlights citrus and floral notes.
Roast & storage notes
- Roast level: Medium roast — balanced to preserve acidity and sweetness while delivering enough body for espresso.
- Roast date: Write roast date on the bag at roast. Best enjoyed 7–28 days after roast based on preference.
- Storage: Keep whole beans in an airtight container away from heat, light and humidity. Grind immediately before brewing.

Letter from the Producer
Hola! My name is Luis Velazquez, but my friends call me Lucho.
I’m from Playa Rica, a small village in the mountains of Colombia. I inherited my family’s farm when I was 11 years old, after life changed in ways I didn’t expect. Today, at 15, I grow coffee, avocados, and bananas, while going to school.
It hasn’t been easy. Farmers like me are often forced to sell our coffee for unfair prices. But I’m not giving up. My dream is to see my coffee reach Europe, and thanks to The Red Mountain, I’m even learning English. (Scan the QR to hear me speak!)
My coffee is 100% Arabica, grown with love, patience, and deep respect for the land.
I drink it every morning, black and without sugar, just the way my grandmother makes it—because she is the sweetness in my life.
My coffee has smooth, bright cup with floral notes and hints of berries, chocolate, and honey. Perfect for a balanced espresso or a clean filter brew
Gracias Lucho
