How to Use / Preparation

For Kibbeh:

  1. Rinse 1 cup of bulgur wheat under cold water.
  2. Soak in 1½ cups of water for 30-60 minutes until softened and water is absorbed.
  3. Drain excess water and gently squeeze out remaining moisture with your hands.
  4. Combine soaked bulgur with 500g ground beef or lamb, 2 finely chopped onions, and spices (1 tsp cumin, ½ tsp allspice, 2 tbsp fresh mint, salt to taste).
  5. Knead the mixture until well combined and holds together.
  6. Shape into balls or elongated patties, about 2 inches in size.
  7. Fry in hot oil until golden brown (3-4 minutes per side) or bake at 190°C for 20-25 minutes until crispy.

For Tabbouleh:

  1. Prepare bulgur as above (soak and drain).
  2. Combine with 2 cups chopped fresh parsley, 1 cup diced tomatoes, ½ cup diced cucumber, and ¼ cup fresh mint.
  3. Dress with 3 tbsp lemon juice, 3 tbsp olive oil, and salt to taste.
  4. Mix well and refrigerate for 30 minutes before serving.

For Pilafs:

  1. Sauté prepared bulgur in butter or oil with diced onions for 2-3 minutes.
  2. Add vegetable or meat broth (1½ cups liquid per 1 cup bulgur) and bring to simmer.
  3. Cook uncovered for 10-15 minutes until tender and liquid is absorbed.
  4. Fluff with a fork and serve hot.
