Why This Recipe Works (And Why Authentic Ingredients Matter)
Here's the truth: you cannot make real feijoada without feijão preto (Brazilian black beans) and authentic linguiça. Regular black beans and Dutch sausages won't give you that deep, smoky flavour and rich texture. These are the ingredients you must get right.
At Desapega, we stock authentic Camil Feijão Preto and Prisca Linguiça Calabresa – the same brands your família uses in Brazil. No substitutes, no compromises.
Feijoada Completa Recipe (Serves 8-10 people)
Ingredients You'll Need:
Essential Ingredients (from Desapega):
- 1kg Camil Feijão Preto (Black Beans) – The foundation of feijoada
- 300g Prisca Misto de Enchidos para Feijoada – Pre-mixed authentic sausages
- 300g Prisca Linguiça Calabresa – Smoked Brazilian sausage
- 200-300g Carne Seca de Vaca – Soaked 12-24h, shredded — adds deep umami depth (what is carne seca?)
- 3-4 Ferbar Louro (Bay Leaves) – Essential for depth
- 1-2 Pimenta Malagueta – For authentic heat
- 2 tbsp Alho Granulado (Granulated Garlic)
Other Ingredients (Dutch Supermarkets):
- 200g bacon or pancetta, diced
- 200g pork ribs or shoulder, cut into chunks
- 1 large onion, finely chopped
- 4 cloves fresh garlic, minced
- 2 tablespoons vegetable oil
- Salt and black pepper to taste
Step-by-Step Instructions:
Step 1: Soak the Beans & Carne Seca (Night Before)
- Rinse the feijão preto under cold water, place in a large bowl, cover with water (5cm above beans), soak overnight
- Simultaneously: cut carne seca into 5-7cm pieces, soak in cold water in the fridge, changing water every 6-8 hours
- Drain and rinse both before cooking
Step 2: Cook the Carne Seca (30 minutes)
- Pressure cook the desalted carne seca 25-30 minutes until tender
- Cool slightly, shred with two forks into thin strands. Set aside.
Step 3: Cook the Beans (25-30 minutes)
- In a large pressure cooker, add drained beans with fresh water (8cm above)
- Add bay leaves and malagueta pepper
- Cook 25-30 minutes under pressure until tender
Step 4: Brown the Meats (30 minutes)
- Slice linguiça calabresa into 3cm rounds, cut misto de enchidos into pieces
- Brown all meats in batches, set aside
Step 5: Make the Refogado & Combine (1 hour)
- Sauté onion until golden, add garlic and granulated garlic
- Scoop 2 ladles of beans, mash, stir back in to thicken
- Add all meats and shredded carne seca to the bean pot
- Simmer 45-60 minutes on low heat until rich and dark
- Taste, adjust salt and pepper. Remove bay leaves.
Chef's Tips for Perfect Feijoada:
- Too salty? Add a peeled potato and simmer 20 minutes.
- Too thin? Mash more beans and stir back in.
- Make ahead: Feijoada tastes BETTER the next day. Make Friday, serve Saturday.
- Freezing: Freezes beautifully for up to 3 months.
- No time? Use Bordon Feijoada Pronta as a base and add fresh linguiça.
Essential Accompaniments
1. Farofa (ESSENTIAL)
Yoki Farofa Tradicional – The crunchy cassava flour that soaks up the broth.
2. White Rice
Camil Arroz Branco – Fluffy white rice to balance the richness.
3. Orange Slices
Fresh orange slices – The acidity cuts through the fat. Trust the tradition.
4. Malagueta Pepper Sauce
Pimenta Malagueta Verde – For those who like it hot.
The Cultural Story Behind Feijoada
Feijoada originated in Brazil during the colonial period, created by enslaved Africans using accessible ingredients like black beans and less desirable cuts of pork. Over time, it evolved into Brazil's national dish, transcending its humble origins to become a symbol of Brazilian identity and resilience.
