Here's the truth: you cannot make real feijoada without feijão preto (Brazilian black beans) and authentic linguiça. Regular black beans and Dutch sausages won't give you that deep, smoky flavour and rich texture. These are the ingredients you must get right.

Feijoada Completa Recipe (Serves 8-10 people)

Ingredients You'll Need:

  • 200g bacon or pancetta, diced
  • 200g pork ribs or shoulder, cut into chunks
  • 1 large onion, finely chopped
  • 4 cloves fresh garlic, minced
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste

Step-by-Step Instructions:

Step 1: Soak the Beans & Carne Seca (Night Before)

  1. Rinse the feijão preto under cold water, place in a large bowl, cover with water (5cm above beans), soak overnight
  2. Simultaneously: cut carne seca into 5-7cm pieces, soak in cold water in the fridge, changing water every 6-8 hours
  3. Drain and rinse both before cooking

Step 2: Cook the Carne Seca (30 minutes)

  1. Pressure cook the desalted carne seca 25-30 minutes until tender
  2. Cool slightly, shred with two forks into thin strands. Set aside.

Step 3: Cook the Beans (25-30 minutes)

  1. In a large pressure cooker, add drained beans with fresh water (8cm above)
  2. Add bay leaves and malagueta pepper
  3. Cook 25-30 minutes under pressure until tender

Step 4: Brown the Meats (30 minutes)

  1. Slice linguiça calabresa into 3cm rounds, cut misto de enchidos into pieces
  2. Brown all meats in batches, set aside

Step 5: Make the Refogado & Combine (1 hour)

  1. Sauté onion until golden, add garlic and granulated garlic
  2. Scoop 2 ladles of beans, mash, stir back in to thicken
  3. Add all meats and shredded carne seca to the bean pot
  4. Simmer 45-60 minutes on low heat until rich and dark
  5. Taste, adjust salt and pepper. Remove bay leaves.

  • Too salty? Add a peeled potato and simmer 20 minutes.
  • Too thin? Mash more beans and stir back in.
  • Make ahead: Feijoada tastes BETTER the next day. Make Friday, serve Saturday.
